Sarah was born in Jacksonville, NC where her father served in the Marine Corps. She grew up in NC, GA, AL, NH, and MD. She went to Croatan High School and the UNC School of the Arts. She started to major in art at UNC Chapel Hill, but she changed majors and schools. She graduated with a BS in Dietetics from Appalachian State University. In college, she found Unitarianism and tried out the congregation in Boone, NC. For her capstone internship at Carteret Health Care, she met Susan Fetzer who told her about UCF!
After college, Sarah joined the Army and served six years earning her master’s degree in nutrition from Baylor University and her dietetic license. She was stationed at Fort Sam Houston in San Antonio, TX and Fort Jackson in Columbia, SC. She married her high school sweetheart, James Wax. They had their son Allen while stationed at Fort Jackson. Allen is now 4 years old and loves swimming, art, baking, playing with his cousins, and driving his toy jeep. Sarah was a member at the Unitarian congregation in Columbia where Allen had his dedication.
After the Army, Sarah and her family moved back home to Cape Carteret a few months before COVID-19 started. They had their daughter, Summer, during the pandemic, and she just had her first birthday. Summer loves books, playing in the waves, and eating! Currently, Sarah is a stay-at-home mom and serves on the Cape Carteret planning board. She is looking forward to meeting the members and volunteering!
